Indigenous fermentations impart a distinct fingerprint on the wines as the Estate’s yeast populations are large, diverse, and unique to the site. They are not for the faint of heart, and there is a great deal of science wrapped around ‘non-manipulative’ winemaking; however, the native yeasts are without a doubt the secret sauce to crafting wines that genuinely reflect the land’s terroir.
Time is a magical ingredient in premium wines designed to age, and is one that we cannot manipulate, but must abide by its simple passage. Cellar-ageing is a serious commitment, and was made on the founding of Foxes Island in 1992. Over the past 35 years, the winery has maintained the program and remains the only winery in New Zealand to cellar-age all its wines before release. You will taste John’s signature across the wines; perfect line and length to support impeccable balance and sensual texture. Above all else, we seek harmony; never should one element dominate another.
